Elena’s Favorite Shan Noodle House in Yangon

So round two of my Shan posts involve Shan Noodles.  This is a staple in Myanmar. The noodles can be served dry (sticky) or in a soup.  I really prefer them dry.  Everyone seems to have their own recipe and you can find a number of these on line.  Elena and I made this this weekend for Ivan but we decided to try a low-cal version.  We reduced the fat, eliminated the sugar and served them on zucchini and squash noodles rather than using the traditional rice noodle. This is an amazingly good dish so give it a try…

Shan Noodle Soup

Ingredients:

  • 10 oz. dried rice noodles (shape should be similar to a fettucine noodle)
  • 1 onion , chopped
  • 5 cloves garlic , chopped
  • 1 (1-inch) piece ginger , peeled and finely diced
  • 1 lb ground chicken, pork or turkey
  • 8 diced tomatoes 
  • 1 tablespoon tomato paste
  • 3 tablespoons soy sauce
  • 1 tablespoon Spanish smoked paprika
  • 2 tablespoons cayenne chili powder
  • 8 tablespoons finely diced peanuts (for garnish)
  • 2 sliced green onions or scallions (for garnishing)

Preparation:

  1. Heat water in a large pot until it comes to a boil.  Place the rice noodles in the water and turn off the heat. 
  2. Spray one spray of pan in a pot, add the ginger, onion and garlic and sauté for 6 to 8 minutes.
  3. Add all but the peanuts and scallions and cook for 15 minutes. 
  4. Add the chopped chicken (or pork), tomatoes, tomato paste, and stir well. Add soy sauce and sugar and cook over a medium heat for 15 minutes until all tomatoes are crushed.
  5. Put a handful of noodles into a bowl. Spoon ¼ of the sauce on top and garnish with peanuts and scallions.
