Shan Green Tomato Salad & Shan Rice Cake

Elena and I just returned from Myanmar (Burma).  I will post about all of the amazing things we ate there but one of my very favorites (and hers) is Shan Tomato Salad.  If you have access to green tomatoes, you can make the whole thing that way, or all red but my favorite is the mix of red and green. There are a number of variations and Elena and I have made it twice. This is what we settled on: 

Shan Tomato Salad

Ingredients:

  • 4 Roma tomatoes , sliced into thin slices with all of the seeds removed
  • 2 green tomatoes, sliced into thin slices (if you can’t access green tomatoes you can use tomatillos)
  • 2 green onions or shallots , minced
  • 4 tablespoons chopped fresh cilantro
  • 3 tablespoon unsalted roasted peanuts
  • 2 cloves garlic , minced
  • 1 tablespoon fresh ginger, peeled and cut into thin slices
  • ¼ teaspoon ground lemongrass
  • 1 thinly sliced red Thai chili
  • 1 tablespoon fish sauce
  • 2 tablespoons white vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 3 tablespoons sesame seeds
  • Salt
  • Pepper

Combine all of the ingredients and add salt/pepper as needed.
