Italy has a delicious dish called cima ala Genovese which is one of the 1000 Foods to Eat Before You Die.  I haven’t posted too many posts from that book lately, mostly because I have worked my way through 3/4 of the book and there just aren’t that many left!  This dish is usually made with a veal breast but can also be made with a tenderloin.  It is a dish where a pocket is created in the meat, stuffed with many ingredients, stitched up and poached.  What is it stuffed with?  The options are endless. What to give it a try? One thing you can learn from me-you need to make MORE of a pocket.  My version was too much meat and too little stuffing…   Take a look at the options below…
