For anyone who has eaten the Portuguese version called Bacalao, brandade is a French version with a different name but same outcome.  Made from soaking dried salt cod in milk for several days, the finished version is essentially the same consistency as humus.  Served on bread or crackers, the taste is impressive. Oh, and OF COURSE, ti is a 1000 Thing. To be honest, prior to ordering salt cod from Amazon and making this dish, I didn’t even know that salt cod was a thing.  Apparently, it is used widely in Brazilian, Portuguese and French cooking and makes its way into a variety of stews and fritters.  Who knew?  Spruce Eats has a nice version.
