Hirvensarvet (Finnish Stag Antler Christmas Cookies)

Stag Antlers

Today Elena and I baked a batch of Hirvensarvet which are Finnish Stag Antler Christmas cookies.  Essentially a sugar cookie, they have a healthy dose of Cardamom and after being rolled out, cut into 1 x 2 inch strips, tiny slices are made in each side to represent antlers.  Cardamon is a staple in Scandinavian baking and while this is a native ingredient to India, it dates from the time of the Vikings.
