Elena’s Strawberry-Tomato Salad with Burrata Cheese

One of the my favorite things that Elena figure out how to make is this salad. We had a version at Juniper and Ivey and liked it so much that she replicated it in her own way.  We have made it many times since and it is a huge summer hit.  That little Elana is so cleaver. 

Elena's Strawberry-Tomato Salad with Burrata Cheese

Ingredients

1 8-ounce ball fresh burrata cheese

7- to 8-ounce container fresh strawberries, hulled, halved or quartered, if large

2-3 large tomatoes cut into bite-sized chunks

2 tablespoons finely sliced fresh basil leaves

Lime juice of one lime

4 tablespoons pine nuts

1/8 cup balsamic syrup

Fine sea salt to taste

Preparation:

Place the burrata in the middle of a salad bowl.  In a separate bowl combine the remaining ingredients.  Cover the burrata with the strawberry mixture.  Add more balsamic syrup if desired.
