Kalix Lojrom (Bleak Roe) is anything but bleak and Rejer (mini Baltic shrimp) are pretty darn good, too

Kalix Lojrom (Bleak Roe)

It is bleak roe season.  Bleak roe (Kalix Lojrom) is a Swedish delicacy that is roe which comes from the vendace or bleak fish. The season for catching these little whitefish is only 5 weeks long-beginning middle of September and the fish can only be found along the shores of the Gulf of Bothnia (where???).  The roe is VERY fine-almost like grains of sand. They taste really delicious and I am really not a roe fan. 

Skagenrora/Rejer (Baltic Shrimp)

I paired these with Skagenrora (in Swedish) or Rejer (in Danish) which are mini Baltic shrimp. They are about ½ the size of our traditional bay shrimp and are a different variety from what we eat in the US. They seem smaller and sweeter and are VERY, VERY good.  Both can be eaten the same way: piled on top of a piece of toasted rye bread with fixings and paired with a dill-infused crème fraiche.  My most favorite combination was putting the roe on top of a small boiled potato with the dab of the crème fraiche and having the shrimp with all the fixings:  toasted rye bread topped with lettuce, fresh dill, pickled asparagus, sliced cucumber, crème fraiche and the shrimp.  Both Lojrom and Rejer are on the 1000 Foods to Eat Before you Die list and I think, for good reason. Both are really exceptional. I will say, these are not easy to come by. In both cases, I had to use a middle importer to have them brought in but if you get a chance, eat both. They are to die for…
