Elena’s Bogota Arepas

Elena is in Colombia and just sent me a picture of her eating Arepas in Bogota. When we went to Cartagena as a family, we enjoyed eating Arepas in the square. Fried dough, stuffed with cheese, served piping hot-what was there not to like? They are, of course, one of Mimi’s 1000 Foods.

Julie & Elena’s Arepas

While Elena was home, we made our own-they are shockingly easy to make. You have to buy the masa (it comes white and yellow and I bought the yellow) which is special (think Amazon.com) and then mix with salt and water. Form into balls, shove in a small piece of cheese, fry for 5 minutes each side and then put in the oven for an additional 10. Seriously easy to make… We used the recipe from the Food Network.
