Today I had an amazing breakfast in Cardiff/Caerdyff.  I do love a good hash and this one was really simple:  leeks, mushrooms and sweet potatoes.  Apparently, leeks are the national vegetable of Wales and both mushrooms and sweet potatoes follow closely behind.  With sausage, black pudding and coffee, I managed to combine pretty important standards into one very delicious breakfast.  I’ll leave the hash dish up to you, but want to cook the national dish of leeks? try one of the recipes below….

Want to know why leaks are the national symbol of Wales? According to one legend about why the Welsh wear leeks on St David’s Day, the soldiers of the ancient British king, Cadwaladyr, were about to fight their traditional enemy, the Saxons. Dewi Sant (St David) advised the Welsh to wear a leek  in order to recognize their fellow countrymen during the battle.  The Welsh wore leeks in their hats – and subsequently gained a great victory over their opponents. Not sure about wearing them but I did enjoy eating them.
