Silician Dumplings

Kotlety Po-Kievski is Chicken Kiev but last night I had not the kind that you buy frozen and put in the oven for 20 minutes to eat-but the real thing.  I know it really still doesn’t look like so much but mine came nestled on a small amount of masked potatoes so when I cut into it, the butter had a place to go.  They are a 1000 thing to eat before you die and since I was in Poland darn close to the Ukrainian border, they seemed an ideal food to try last night when I went to dinner at the Stary Dom with a very nice family who are good friends of a good friend.  I felt a need to add silician dumplings to the mix. While they look plain, they are a potato dumpling which is made with potato starch rather than flour and a fair amount of eggs which make them very soft and smooth.  They are far tastier than their gnocchi cousins and were just the thing to sop up that delicious melted butter.  I am putting in the picture of my gin and tonic, too, as it came with rosemary, cucumbers, and a dried-what I think would be a juniper berry?

 

Pretty fancy.
