Beet Caviar

I am, to be very sure, behind in some of my postings.  Partially because I jumped on the bandwagon of the 1000 Foods and didn’t want to post 10 a day, partially because I am lazy and partially because I had some issues with the format of my blog and didn’t want to post anything until I got it straightened out.  PRE Covid, Elena and I visited one of my most favorite people in the whole world-Elizabeth Campbell who lives in Tucson.  We tried a couple of the 1000 Things to eat including Beet Caviar. Beet Caviar is must made of beets but one of the Russian items from the book is having vegetables used in the place of caviar.  We all enjoyed the freshness of the beets but make no mistake, this is just beets seasoned with fried onions and garlic.
