Niki’s Kale Salad

One of the good things to come out of the plague is that I a am spending more time cooking. Last night I made my niece Niki’s Kale Salad. This is a warmed, heavy salad that is great as a main course or in this case, we ate it with grilled lobster tails.  It has few ingredients-kale, onions, garlic, garbanzo beans and lemon juice but is really delicious.  This is one those rare delicious you should give a try and then will make weekly. 

Niki' Kale Salad

Ingredients:

1 yellow onion, diced

Olive Oil

2-3 cloves of garlic, minced

1 can of garbanzo beans

1 bunch fresh kale

Juice of 2 lemons

Salt/pepper to taste

Preparation:

  1.  Sautéed the onion and garlic until browned and translucent. Remove from the pan and set aside.
  2. Sautee the garbanzo beans for 5 minutes or until they become slightly browned. Remove from pan.
  3. Add the lemon juice and chopped kale to the pan and wilt the kale slightly-1-2 minutes. 
  4. Toss all of the ingredients together and serve.
