A Kransekager for Elena

Today was Elena’s birthday and we had dinner at home and for dessert we had a Kransekager which is a Norwegian/Danish cake served for special occasions which is made up of rings of almond flour/marzipan rings.  I had ordered it from the Royal Swedish Bakery in Poway (quickly becoming one of my most favorite places). It is, of course, one of the 1000 Foods to Eat before you Die and fit for my one-of-a-kind Daughter.  Happy birthday, Elena!
