I learned about Bulgogi in Korea when I was 19 years old. I loved the thinly sliced meat which I ate atop a white rice and green pea mixture. Later I dated a guy who had gone to Korea and we made it together and for a while it was one of my favorite things to make. A few decades have passed and I visited Tara in Edmonton. Her favorite bakery served Bulgogi sandwiches which seemed like a great idea. It was, they were delicious. Elena and Ivan are home today and we had them for lunch. The only really tricky part is slicing the beef really thin. You can cheat, go to Atlas Market, and buy the beef already sliced ready for Bulgogi which is what I did. The marinade is interesting-pears and onions. I followed the recipe from Curious Cusinere but instead of the chopped veggies, the Edmonton version had had more of a slaw and less of a sliced vegetable mixture so I marinated pre-cut cold slaw in the same marinade as Curious Cusinere did their vegetables. I piled that atop the beef and sprinkled with toasted sesame seeds. The one I had in Edmonton also had lettuce but I skipped that today. Some recipes call for a garlic mayo, yogurt sauce or sliced cheese but I like the meet and slaw all on their own.
