Berber khobz: a new take on flatbread, berber style

I will admit that I love to travel and part of that travel is trying all the new food combinations you don’t find at home.  Moroccan food has always been a great love of mine-I love the soupy meat and veggies In cooked in a tagine.  I love preserved lemons and foods that are cooked with Olives.  Marrakesh has long been on my list and in 2014 my family took a trip. As part of that trip, we spent a day in the Atlas Mountains with the

Berbers.  We ate the most delicious bread, a flatbread-type bread called Khobz.  This bread is cooked in an outdoor oven that looks much like an italian pizza oven.   A few days later we learned to make the same at a cooking class from La Maison Arabe.  To bread.jpgbegin with, this is a breathtakingly beautiful hotel and worth a visit. The hotel is full of antique carpets and Morrakean art along with coffee leather chairs….  The class was held out of town-we took a shuttle approximately 1/2 out to a state-of-the art cooking facility set in a working garden. We made a variety of dishes but my favorite was still this bread.  I have made this at home and it can be done.  My oven lacks the atmosphere of Marrakesh but the bread is still amazing when dipped into those tagine inspired dishes.  Want to make it yourself?
