Vacherin du Mont d’Or

I have been trying to get ahold of this cheese for a couple of years. It is made high in the mountains between France and Switzerland. It is made in very limited amounts and can only be obtained for a very small period of time during the fall. Murray’s cheese imported it for me and it arrived yesterday. It is soft, gooey and tastes of fresh pastures.  I think of Heide sitting out eating cheese on the side of the mountain.
