Uszaka (Polish Little Ears): Another really delicious dumpling

Golden Borscht &

So today I tried another one of CNN’s 30 Dumplings to eat from around the world. I had dumpling #20 called Uszka or little ears. These are a polish dumpling and they often are usually stuffed with mushrooms or mushrooms and minced meat. They can be eaten in borsht or for Christmas Eve in just a beet broth.

Today I made the borscht version but used golden beats instead of the red variety. I used leeks, mushrooms and celery and the required golden beets.  I threw in boiled potatoes and the mushroom dumplings. They were seasoned with garlic and spicy paprika.  This was such a delicious dish.  Where did I find the dumplings?  I ordered them from Piast Meats & Provisions. The dough was thin-it literally melted in my mouth and the mushrooms were seasoned perfectly.  Thank you, CNN, for suggesting something I might have never known about…
