Brazilian Banana Cake: Cuca de Banana and other ways to use up ripe bananas

So once again, back to the covid19 baking frenzy….  We had many, many very ripe bananas. Rather than making banana bread (Ivan doesn’t eat gluten so it is hard to make  real bread w/o flour) we made a Brazilian Banana Cake using a recipe from Spruce Eats. Good news-it takes 6 bananas and we could easily substitute coconut and almond flour for the regular flour. We use our trusty Truvia-Cane Sugar blend in place of the sugar but left everything else the same.  This turns out to be almost a pudding cake-very soft in the middle-but we are all great fans of the cake.
