One of my most favorite appetizers from my childhood is an olive tart.  These are not difficult to make and not only did we snatch them up as quickly as we could as children, but I find my adult friends eat them pretty quickly as well.  I do suspect that this goes back to my belief that the solution to every problem is cheese….


Olive Tarts

  • Servings: 3 dozen

Ingredients:

2 cups finely grated sharp cheddar cheese

½ cup soft butter

1 cup shifted flour

¼ teaspoon Tabasco

½ teaspoon salt

1-teaspoon paprika

36 small stuffed olives

Preparation:

Blend cheese with butter.  Stir in flour, Tabasco, salt and paprika.  Wrap one teaspoon of mixture around each olive, covering completely.  Arrange on a baking sheet or flat pan and freeze until firm.  When ready to use, spread on baking sheet and bake at 400 degrees for 15 minutes.  Serve hot.  Makes 3 dozen.
