Stollen-No, it is really NOT a Fruitcake…

In the German section of 1000 Foods to Eat Before you Die, is a section called “Weihnactsgeback” or Christmas baking.  So many things can go into this list and so many of them I love.  I have already blogged my recipe for Vanille Kipfel. I have others that I just don’t have time to blog this year but will try to get out at some point.  I have mulled over which one thing should I discuss and I have decided to talk about Stollen. Stollen is a German version of the fruit cake but in reality, it is a yeast bread filled with nuts and dried fruit (and brandy-laced dried fruit if you are lucky).  You can get it stuffed with marzipan and there are so many recipes on line to make it. One of my most favorite ways is to take an online recipe-for example from Spruce Eats which only uses raisins (most have a variety of fruits).  Once baked, you can use it just as it is but a wonderful thing to do is to use it to make French toast. We have a big breakfast on Christmas day so it is nice to find new recipes to liven up the breakfast.  German stolen is a wonderful way to do this.
