Mozzarella en Carrozza (The Ultimate Grilled Cheese)

  When we arrived in Venice, Joey had arranged for us to take a food tour to visit several locations to eat cicchetti  or snacks.  Cicchetti has a long tradition as the venetian tapas, centered around the fact that Venice was a shipping town that needed a quick snack for sailors.  They are now an amazing way to stop, have a quick glass of wine or beer and try a few different things.  On the tour, we had cuttlefish in a black inked sauce, sardines on hardboiled egg half’s, open faced sandwiches  with a myriad of toppings and Mozzarella en Carrozza which is the ultimate grilled cheese.  The difference between the grilled cheese that I had growing up and the one we had in Venice (which is a 1000 Thing to Eat before you Die), is about 1 cube of butter.  This recipe was literally butter soaked bread that had been toasted which had been filled with mozzarella cheese.  It is all about the butter.  Nice Italian Butter. Lots of nice Italian butter.  So much nice Italian butter.
