Huber’s Spanish Coffee in the Grand Canyon
This weekend I spent three wonderful nights at the south rim of Yellowstone celebrating Elizabeth’s 70th birthday. She planned plethora of treats for us including making Spanish coffees using the recipe of Hubers of Portland. For the non-Portland community, Hubers has a very, very Spanish coffee recipe that is completely decadent. On word of warning, while you might want a second, really it is NOT a good idea….
Huber’s Spanish Coffee
¾ ounce 151-proof rum
¼ ounce triple sec
1.5 ounce kalua
Hot coffee from a French press
Whipped cream
Nutmeg
Moisten the rim of an Irish coffee glass or small wine glass with a lime. Dip the rim into a shallow bowl of sugar to completely coat the rim, shake gently to discard extra. Add the rum and light on fire, holding the glass at an angle to caramelize the sugar. Add triple sec, kalua and coffee. Garnish with whipped cream and grated nutmeg.
