Gooseberry Fool

When I lived in Vancouver (near Portland) we used to frequent a place called Rimsky-Korsakoffee House. It was in an unmarked house and had such interesting things as tables that would raise and lower in height while you had your coffee or one that would slowly rotate.  It also had nice music on weekends and a life-sized manikin in the upstairs bathtub in the restroom.  It was pretty quirky but have managed to be in business for more than 40 years. Part of that attraction (at least for me) was the raspberry fool.  If you have not ever had a fool, it is an English dessert which combines fruit, sugar, whipping cream and Greek yogurt.  I had no idea that it was such an easy dessert to make until I decided to make one of the 1000 Foods to eat before you die that was to be made with gooseberries.  What is a gooseberry?  It is a small fruit, about the size of a cherry tomato that has some taste but not so much taste. I guess that means it is sort of a boring fruit to eat.  I whipped up the required Gooseberry Fool and then returned to the raspberry (and alter blueberry) fruit of my earlier years.

Food 52 has a blueberry version that is made with honey.  You could substitute 2-3 tablespoons of granulated sugar if you preferred.
