Marurek’s Checkerboard Pattern

Mazurek is yet another Easter Cake.  This one is Polish and is really more of shortbread cookie that has a lattice put o the top, is baked and then each square is filled with jam to create a checkerboard pattern.  The one we made is not only one of the 1000 Foods to Eat Before you Die but we filled the squares with Cloudberry jam (a 1000 thing) and the red jam was a French black current jam (also a 1000 thing).  When you look on line, there are quite a variety of Marurek recipes and the one I used is from Spruce Eats. Mazurek can be yeast or not-yeast based and the only thing they have in common is that they are always a thin, cookie-type concoction.
